Russia wants cafes and restaurants to put a ‘Russian breakfast’ on the menu

Source: TASS

The Industry and Trade Ministry has recommended that Russian food service businesses add a separate “Russian breakfast” item to their menus, the Russian state news agency TASS reported.

The recommendation covers any cafe or restaurant that serves breakfast, as well as hotels, resorts, and boarding houses. The ministry itself said it will design a special emblem for the “Russian breakfast.”

According to the Industry and Trade Ministry’s recommendations, a “Russian breakfast” may include

  • dairy products and dishes made from them (cottage cheese, baked milk, local cheeses, cheese pancakes), as well as cold cuts of meat and poultry (ham, roast pork);
  • cold fish appetizers and hot dishes made from meat, poultry, and fish (beefsteak, cutlets, boiled and fried fish, sausages);
  • broths served with pirozhki and rasstegai pastries (chicken broth, fish soup, borschok);
  • pastry items (pirozhki, kulebyaka, kurnik pies);
  • other flour-based items (vareniki, vatrushki, sochni, gingerbread);
  • pancakes and fritters, porridges, and casseroles;
  • Russian kissel and other traditional drinks (kvass, fruit drinks, herbal teas);
  • bread and bakery products, and eggs prepared in various ways.

The Industry and Trade Ministry has instructed regional and municipal authorities to carry out “the relevant work,” stressing that the effort should not involve “ethnic cafes and restaurants with a clearly defined specialization.”

The ministry maintains that this is “not a matter of forcibly replacing the range of dishes offered”: authorities merely need to “explain the benefits and financial advantages” of the new breakfast category to business owners.
